It's called Delia's Vegetarian Collection, It was published by the BBC a long time ago.
It has alsorts of different recipies in there. On the cover it says there's over 250 so there is lots to try out!

Been a vegetarian for almost three years now and I'm loving it. I did notice that since I'm a picky eater that I got in a bit of a rut and fell into ill health, but now I'm eating much more healthy and feeling great! I became a veggie over animal right issues as well. My fiance is a vegan since high school. Finding new foods is always challenging but I've realized how creative I can be when I'm cooking food.

Living in the mid-west definitely proves a challenge! Would love to post some recipes and share!!

I am not, honestly don't want to be either. However I do eat a LOT of vegetarian stuff. I'd say about 40% of my meals are meat free and I do even eat a few meals that could fall under the vegan cat. I just like changing it up. I am always looking for new recipes though.

I have found that grape nuts with vanilla soy is probably one of the great breakfasts I ever had. I tend to enjoy vegetarian sandwichs more, and I think tofu is totally under-rated by meat eaters.

I couldn't commit full time but I think not having meat as our main food source all the time helps to keep us healthier

I have been a quasi vegetarian for 7 months. I put quasi because I have eaten meat on a few occasions during this time (yes, I can recall them all, they were not that many). The problem that I had been struggling with is peer pressure and not sticking up for being a vegetarian. I know that many of you have different reasons as to why you have become veg but how do you deal with hanging our or eating around a bunch of meat eaters when youre the only one that doesnt eat it?

Also, when I have little to no time and very few dollars I end up eating junk food. Do you guys have some easy/cheap quick healthy recipes?

I've been eating vegan for 2 years now (before that vegetarian for a while) and I'm ALMOST consequent except for a little cheese every few weeks or so red face That was the only part I found hard to give up.

Almost all of the people I hang out with eat meat and everything else, but I found the acceptance of my diet to be pretty high after the initial lack of understanding. I think one of the reasons for it is that I don't try to evangelise anyone, I only give my reasons when I'm asked for them (and I've read quite a few books about that topic, so I have a broad palette of arguments). Thus I guess I'm lucky that I have little to no pressure when it comes to others judging what I eat and what I don't eat.

What I always do is bringing my own stuff when I'm invited to a barbecue or something and know that it'll be a meat feast. I try and prepare my veg stuff really nicely and beautifully, bringing vegan sausages, steaks (there are a few really good ones out there!) and veggie sticks so that others won't get the false impression that I'm lacking anything, since there's a common prejudice that vegans always sit in the corner nibbling on grains all evening lol. Most meat eaters are pretty surprised that there are other meat alternatives than the horribly prepared wobbly tofu they usually offer in asian restaurants and find my patties, sausages, gyros or sauce bolognese actually really tasty.

I've also read a really useful book called "Living among meat eaters" by Carol J. Adams which deals with exactly these issues. Of course, every now and then you run into that really stubborn meat fanatic who'll try "talking some sense into you", but I'm pretty good at ignoring that and asking him/her to let me eat what I want, since I let everyone eat what they want as well.

On a sidenote to that, I found that I've become increasingly more self-conscious and less adaptive after I switched diets. More able to stand up for what I want, so to speak, but I'm not demanding or aggressive - or trying to talk a bad conscience into others for eating meat. I mean I've been eating meat for over 20 years and remember well how I never understood why someone would choose to be a vegetarian, let alone vegan. Giving up on meat was a process I had to want and undergo on my own.

As for the junk food and easy/cheap alternatives, I don't know which options you have in the area you live in. I'm blessed with a vegan fast food restaurant (Mojo Burger tongue rolleye ... they're also really good and make healthy stuff) right around the corner and a few great organic supermarkes that offer ready-to-eat stuff at reasonable prices, but when I have really little time and want to cook for myself I usually end up making a veg stew of some sort. Tossing potatoes, carrots (I always have those two at home) and whatever else I may have, like cauliflower, broccoli, leak etc into a pot, boil that in vegetable broth, add some spices and blend or not blend it afterwards depending on how I feel. Takes me less than 10 minutes, can be left alone while it boils (to game in the meantime, lol), and if it's a big pot, usually lasts for 2-3 days in the fridge. Not very creative, but quick & cheap (and healthy). I also like making ratatouille, fried potatoes, pasta or asian woks - I find all of these really fast and easy. I got a few good vegetarian/vegan cookbooks, but I must admit I don't often cook with recipes.. I tend to experiment with the stuff I have and though I wouldn't say I'm a great cook it usually turns out okay :D But if you're looking for a certain recipe I can skim through my books and see if I find anything smile

I won't ever give up on eating meat, but I do believe in getting farm/barn raised or wild hunted game and humanly slaughtered meat (animals that have had a happy life and not raised in a cage).. if it was an option I'd love to have my own sustainable farm and trade with others. Overly processed food is bad for you and not how humans were meant to eat.

Many vegetarians/vegans don't even know about the amount of harm that farms do to the environment and in turn animals being forced from their homes in order to grow the crops vegetarians/vegans need to feed themselves.

Sadly despite the efforts of millions of vegetarians/vegans worldwide not eating meat is still an indirect form of slaughter.

Humans are a disease :|

I met a guy who eats any and everything. BUT, he did say that when he gets to choose his meats he tries to get cruelty free raised animals. I would feel comfortable eating around him knowing that I am not eating meat.

For my choice I just can't stomach eating animals knowing how they were slaughtered as if they were nothing and the conditions that they are kept as if they don't matter. I won't get into it here but I would probably try for cruelty free animal products as well if I choose to eat meat.

becoming a vegetarian was the best decision i have ever made in my life. i feel so much better, i have more energy and i no longer suffer from a bloated stomach. i thought i'd really miss the meat but i don't. only sometimes if a neighbor is cooking bacon i can get the urge to just barge in there. lol. shopping can sometimes be a bit of a challenge but it's totally worth it! i have not eaten a single piece of meat for 9 months and i plan on keeping it up. smile

I am not vegitarian, but I definatly lean that way with my eatting habits. Here are a couple recipes that I like:

I use this black bean soup recipe. It is fast and easy, not the most fancy, but it is good none the less.

I also really like this recipe, eventhough it says to use egg. There may be a substitute that I don't know of.

Sad, I like steak. I would never being able to give it up that and veggies and I don't mix well. Everytime I have lettuce it doesn't end well, my mommy and sister say that it is just a sign that I need more veggies.
