I was inspired to make this because of my love for this sauce when I go to Regios or Mr. Pollo for a roasted chicken. I always have to ask for extra green sauce (as I call it) when ordering (they probably think I don’t even know the name of this sauce, pfffft). My search on amazon for a easy fix revealed this video. I didn’t use as many tomatillos as she did and left out the onion, but it still tasted great and turned out exactly the way I like it. Here is my rendition of Salsa Verde with Avocado:
2 Large Avocados
4 to five tomatillos
1/2 to whole jalapeno (Two if you like spicy. I like mine to bite back.)
about 3 or 4 strands of Cilantro
1. Take husk off of tomatillos, then rinse off. Cut into fours and put in a blender.
2. Chop the jalapeno,cilantro and avocados and put into blender. Squeeze the 2 limes into the blender, and add a dash of salt and onion powder.
3. Blend to consistency you prefer.
I like mine smooth and creamy.
Makes about 1 1/2 to 2 cups
